1 tsp. ground cumin

1 tsp. turmeric

1 tsp. chili powder

1 tsp. garam masala

1 lb. protein of your choice (such as chicken, lamb, or beef)

1 cup tomato puree

1 cup water

2 tbsp. cilantro, chopped

1 lime, cut into wedges


Instructions:


 Rinse the rice and soak in water for 30 minutes. Drain and set aside.

 In a large saucepan, heat the ghee or oil over medium heat. Add the cinnamon sticks and green cardamom pods and cook until fragrant, about 1 minute.

Add the onion and cook until softened and lightly browned, about 5 minutes. Add the garlic and ginger and cook for an additional minute.

Stir in the coriander, cumin, turmeric, chili powder, and garam masala and cook until fragrant, about 1 minute.

Add the protein of your choice to the pan and cook until browned on all sides, about 5-7 minutes.

Stir in the tomato puree and cook for an additional 2-3 minutes.

Add the water to the pan and bring to a boil. Reduce the heat to low and add the soaked rice. Cover the pan and cook until the liquid has been absorbed and the rice is cooked, about 15-20 minutes.

Stir in the cilantro and serve the Biryan in bowls, garnished with lime wedges.
